Smoked Jiggs Dinner
Ingredients and Necessities
- 3-4 lb. flat-cut corned beef brisket
- salt, pepper, and garlic mix
- 1 whole cabbage
- baby carrots
- red potatoes
- worcestershire sauce
- half stick of butter
- water
- large foil pan
- alluminum foil
- guinness beer
Cooking Time
Around 4.5 to 5 hours.
Step 1 - Ready the Brisket
Remove brisket from packaging and pat dry with paper towels. Season with salt, pepper and garlic powder mix on all sides (including the edges). Set aside.
Step 2 - Light the Fires
Prepare your coals or set your smoker temp to 250°. Work on the next step while the smoker is heating up.
Step 3 - Vegetable Prep
Carefully cut out the core from cabbage keeping it fully intact (you will need it later). Fill the space you cut out with the salt, pepper and garlic mix, half a stick of butter, and worcestershire sauce. Place core back in.
Wrap the cabbage in alluminum foil leaving about 2-3 inches from the core exposed, and leave yourself some extra foil to fully wrap it when you are ready. Set aside.
Quarter the onions (If your potatoes are very large quarter them too). Set aside.
Step 4 - Smoke the Brisket
When your smoker has hit a stable 250°, place the brisket in the center fat side down.
Smoke the brisket until you reach an internal temp around 130° before moving to the next step. This will take around 2 hours.
Step 5 - Boiled
Move brisket to foil pan. Fill pan with water leaving about an inch of the top of the brisket exposed, then cover with foil. Increase temp of smoker to 300°. Allow to cook for another half hour.
Step 6 - Smoke the Cabbage
Add your foil encased cabbage to smoker next to the brisket pan. Smoke for about a half hour before moving to the next step.
Step 7 - Add the Rest of the Vegetables
Fully cover the cabbage in foil. Add carrots and potatoes to brisket pan water around the sides of the brisket. Cover.
Your meal is ready when the brisket has hit 195° internally, and the vegetables are tender. This will take another 1.5 to 2 hours.
Step 8 - Finished Meal
If you did everything correctly, the vegetables and brisket should be done at the same time.
Place the brisket on a large plate and slice accross the grain. Place the carrots, potatoes and onions around it.
Remove the cabbage from foil and discard any leaves that blackened during the smoking process. Place on a different plate and cut into quarters.
