Chicken Fried Rice

Ingredients and Necessities

  • Cooked white rice (see perfect white rice recipe here)
  • 1 lb. chicken
  • 2 eggs
  • preferred vegetable medley (suggestions: green beans, peas, carrots and/or bell peppers)
  • 2 tbsp soy sauce
  • Salt
  • Pepper
  • Garlic powder
  • Water
  • Sesame seed oil

Step 1

Dice chicken into 1 inch squares. Season with salt, pepper and garlic powder. Add 1 tbsp sesame oil to pan, and cook the chicken thoroughly. Set aside.

Step 2

Season your vegetable medley with salt and pepper and pan cook for 3-4 minutes. Lower heat, add 2 tbsp water to pan and cover. Let the vegetable medley steam for another 3-4 minutes. When the vegetables are cooked and soft, remove from pan and set aside.

Step 3

Add 1 tbsp sesame oil to pan heat it up over medium heat. While the pan heats, beat 2 eggs with salt and pepper. When the pan is heated, slowly add the eggs to the pan in small portions. Allow the eggs to cook and scrape the eggs from the pan before adding more. You should have small egg flakes.

Step 4

When the eggs are fully cooked, add rice, chicken, vegetable medley, 2 tbsp soy sauce, salt and pepper to the pan. Fry the mixture for 5 minutes.

Step 5

Remove from heat. Plate and enjoy.
